I was fooling around with a new pumpkin pie recipe this weekend for my new account, The Bay Club at Mattapoisett and this is how it turned out! It is a simple short crust (pate brisee), added some smashed up gingersnap cookies to the top of the crust then topped with a traditional pumpkin pie recipe. This amazing dessert is a modern version of the traditional pecan or pumpkin pie served at holiday parties. The presentation is outdone only by the incredible taste. The crust is so buttery and flaky it is a treat all its own! The tart cranberries are bursting with flavor, the perfect accompaniment to the crunchy almonds. There is none of the goopy sticky sweet overwhelming feeling your teeth get from a store bought holiday pie – this is pure yum.
